I am getting to that point in my workload now where I am feeling pretty stressed - as sugar is supposed to be a sedative I have been looking out for my fixes in as many different ways as possible of late. Oh, I know, it's any excuse for me! Well, it just so happens that honey happens to be one of my favourites; as far as I am concerned, it is right up there with chocolate as hallowed comfort food. I suppose it is partly because I associate it so much with my childhood, as my mother used it as a sweetener instead of refined sugar for me, and also as a household remedy for colds (more on that later).

Well, in case you are wondering exactly what honey is, then it is a super-saturated sugar solution made by bees to feed their larvae and survive on over winter. It is composed of fructose (fruit sugar), glucose (monosaccharide sugar), and water, with trace amounts of oils and enzymes. It is made from the nectar of flowering plants, and taste will vary depending on the age of the honey and the source of the nectar. If you buy single source rather than blended varieties, then you can really notice this difference - orange blossom and heather honeys have particularly distinctive flavours. Both Tesco and M&S produce single source honey, but it is more expensive than the blended stuff, although highly yummy! Gale's honey is a blended product, so will have a less distinctive flavour than the single source, but is cheaper - around £1.80 for a jar.
